Spinach, mushroom & goat cheese quiche
This quiche was DIVINE. It was SO good; so much better than I imagined it would be. 10/10 make this recipe!
What you will need:
• 1/2lb baby bella mushrooms
• 2-3 cups fresh spinach
• 1 frozen pie shell
• 5 eggs
• 4 oz crumbled goat cheese
1. Dice up your mushrooms
2. Add the mushrooms to a pan over medium heat
3. Toss in your fresh spinach and cook until soft
4. Spoon the skillet mixture into your defrosted pie shell
5. Sprinkle goat cheese on top (leaving some in the container for later)
6. Break 5 eggs into a large bowl & whisk until blended
7. Pour the whisked eggs over the mushrooms & spinach in the pie shell
8. Bake in the oven at 350°F for 25-30 minutes
9. Let it sit for 5 minutes before slicing
10. Sprinkle fresh goat cheese on top & enjoy
