Crockpot pork & cabbage soup
I think this may be my new favorite soup, and now you can try it too right as fall is making its way in.
what you’ll need:
- crockpot
- 1 yellow onion
- 1lb sauerkraut
- 1/2 head of cabbage
- 2 cans diced tomatoes (14.5 oz)
- vegetable broth (4 cups)
- pork butt roast (1-2lb)
- 1lb potatoes (chopped)
- salt & pepper
- garlic
- caraway seed
Ready to start:
- chop up your 1/2 head of cabbage, dice your yellow onion & cut up your potatoes
- place your pork into the crockpot
- add in salt and pepper to taste
- add in garlic to taste (I added 3 tbsp of minced garlic)
- empty all of the sauerkraut into the crockpot
- add your cabbage, onion & potatoes into the crockpot
- pour both cans of tomatoes into the crockpot
- add the vegetable broth to the crockpot
- Add 1 tbsp of caraway seeds
- mix all ingredients together
- cook on high for 5-6 hrs
- remove pork and place into a mixing bowl
- shred the pork with 2 forks or preferred method
- add the pork back to the crockpot and mix again
- serve and enjoy
