Crockpot pork & cabbage soup

I think this may be my new favorite soup, and now you can try it too right as fall is making its way in.

what you’ll need:

  1. crockpot
  2. 1 yellow onion
  3. 1lb sauerkraut
  4. 1/2 head of cabbage
  5. 2 cans diced tomatoes (14.5 oz)
  6. vegetable broth (4 cups)
  7. pork butt roast (1-2lb)
  8. 1lb potatoes (chopped)
  9. salt & pepper
  10. garlic
  11. caraway seed

Ready to start:

  1. chop up your 1/2 head of cabbage, dice your yellow onion & cut up your potatoes
  2. place your pork into the crockpot
  3. add in salt and pepper to taste
  4. add in garlic to taste (I added 3 tbsp of minced garlic)
  5. empty all of the sauerkraut into the crockpot
  6. add your cabbage, onion & potatoes into the crockpot
  7. pour both cans of tomatoes into the crockpot
  8. add the vegetable broth to the crockpot
  9. Add 1 tbsp of caraway seeds
  10. mix all ingredients together
  11. cook on high for 5-6 hrs
  12. remove pork and place into a mixing bowl
  13. shred the pork with 2 forks or preferred method
  14. add the pork back to the crockpot and mix again
  15. serve and enjoy
