Greek orzo bowls
I think I could actually eat this meal every day of my life. It is SO GOOD.
What you will need:
• 1 zucchini
• 1 bunch of cherry tomatoes
• 1 can of chickpeas
• 1/2 a box of orzo pasta
• 1 tbsp lemon juice
• 1 tbsp minced garlic
• hummus
• plain Greek yogurt
• feta cheese
1. Boil your orzo pasta according to the directions on the box (usually about 10 minutes)
2. Cut your zucchini up into small pieces and add to a skillet drizzled with olive oil over medium heat
3. Cut your cherry tomatoes in halves and add to the skillet with the zucchini
4. Cook the vegetables until they are tender and then add the can of chickpeas (drained)
5. Add a tbsp of garlic and a tbsp of lemon juice and mix
6. Drain the orzo when it is finished and drizzle olive oil into the pot so that it doesn’t stick
7. Spoon the orzo into your bowl first, then top with your vegetable mixture
8. Spoon 1 tbsp Greek yogurt, 1 tbsp hummus, and some feta cheese on top
9. Mix it all together and enjoy!
