BBQ chicken sweet potato bowls


 I actually made this recipe up on the spot. I had something different in mind for the pulled BBQ chicken, but I picked up sweet potatoes with our grocery order that morning and something just told me to use them instead. I was hesitant at first, but MAN did this turn out GOOD! 

What you will need: 

•4 chicken breasts 

•1 can of chicken broth 

•1.5 cups BBQ sauce 

• 3 sweet potatoes 

•your favorite shredded cheese 


1. Place your chicken breasts in a crockpot

2. Pour the can of chicken broth into the crockpot over your chicken breasts 

3. Cover and cook on low for about 6 hours or high for about 3 hours

4. Start preparing your sweet potatoes when there is approximately 40 minutes left on your crockpot

5. Peel the sweet potatoes

6. Dice the sweet potatoes into bite-sized pieces

7. Cook the diced sweet potatoes over medium heat with olive oil in a skillet for about 30 minutes until they are soft on the inside and a little crisp on the outside (yum)  

8. Transfer the cooked chicken breasts to a separate bowl and shred them using 2 forks 

9.  Pour your BBQ sauce into the bowl of shredded chicken and stir 

10. Add your sweet potato to your dinner bowl

11. Add the shredded chicken on top & drizzle a little extra BBQ sauce 

12. Top with shredded cheese and stir it up & enjoy!!
