Summer corn salad

This side dish is so simple, and SO good. We paired it with grilled chicken and it was just perfect! It comes together quickly and only has 3 main ingredients. It’s colorful, tasty, and fresh!

What you will need:
• 3 ears of corn
• 1 carton of cherry tomatoes
• 2 cups fresh mozzarella
• basil
• olive oil
• salt and pepper


1. Cook your corn. We cooked ours on the grill at the same time as the chicken we paired it with!

2. Once the corn is done, cut the corn off of the cob into a large bowl/serving dish 

3. Slice your cherry tomatoes in half and add them to the bowl of corn 

4. Dice your fresh mozzarella into smaller bite-sized pieces, and add it to your bowl of corn and tomatoes 

5. Drizzle olive oil on top of the mixture in the bowl 

6. Sprinkle some chopped basil on top

7. Shake on some salt and pepper

8. Mix together with a spoon and serve!
