Eggroll in a Bowl

This is, hands down, one of my favorite dinners to make. It’s quick, easy, and oh so good. Everyone in my house loves it - including my two year old. She eats this stuff up!! Granted, she’s not particularly picky, but she really scarfs this dinner down.

What you will need:

  • One bag of coleslaw 
  • One pound of ground turkey
  • One bunch of green onions
  • Ground ginger
  • Ground garlic
  • Toasted sesame seeds 
  • Sesame oil 
  • 1/3 cup soy sauce 
  • Red wine vinegar 
  • 1/4 cup water 
  • 2 cups brown rice  
  1. Start your rice now if you’re using a rice cooker like me! 
  2. Heat olive oil in a skillet over medium heat 
  3. Add your ground turkey and cook thoroughly
  4. Cut your green onion into small pieces and add half to the cooked ground turkey 


  5. Push the mixture to the side of your skillet and add the entire bag of coleslaw 
  6. Add 1/4 cup water 
  7. Add a couple drops of red wine vinegar 
  8. Add 1/3 cup soy sauce
  9. Stir everything together in your skillet 
  10. Shake ground ginger and ground garlic over your mixture and stir 
  11. Turn heat to medium low heat and let it simmer for 10 minutes 
  12. Drizzle sesame oil over your mixture and stir 
  13. Add a handful of toasted sesame seeds on top of your mixture 
  14. Once rice is done cooking, scoop the rice into a bowl and top with your skillet mixture 
  15. Add some raw green onion on top and enjoy!
