Eggroll in a Bowl
This is, hands down, one of my favorite dinners to make. It’s quick, easy, and oh so good. Everyone in my house loves it - including my two year old. She eats this stuff up!! Granted, she’s not particularly picky, but she really scarfs this dinner down.

- One bag of coleslaw
- One pound of ground turkey
- One bunch of green onions
- Ground ginger
- Ground garlic
- Toasted sesame seeds
- Sesame oil
- 1/3 cup soy sauce
- Red wine vinegar
- 1/4 cup water
- 2 cups brown rice
- Start your rice now if you’re using a rice cooker like me!
- Heat olive oil in a skillet over medium heat
- Add your ground turkey and cook thoroughly
- Cut your green onion into small pieces and add half to the cooked ground turkey
- Push the mixture to the side of your skillet and add the entire bag of coleslaw
- Add 1/4 cup water
- Add a couple drops of red wine vinegar
- Add 1/3 cup soy sauce
- Stir everything together in your skillet
- Shake ground ginger and ground garlic over your mixture and stir
- Turn heat to medium low heat and let it simmer for 10 minutes
- Drizzle sesame oil over your mixture and stir
- Add a handful of toasted sesame seeds on top of your mixture
- Once rice is done cooking, scoop the rice into a bowl and top with your skillet mixture
- Add some raw green onion on top and enjoy!
