Spinach & broccoli lemon ricotta spaghetti

This dish was creamy, savory, tangy goodness.

What you will need:

• spaghetti noodles
• 1 crown of broccoli
• fresh spinach
• 1 lemon
• 1 cup ricotta cheese
• 1 tbsp minced garlic
• 2 tbsp Parmesan cheese
• olive oil

1. Cut your broccoli into bite sized pieces
2. Transfer the broccoli to a skillet with olive oil and cook over medium heat for roughly 5 minutes

3. Boil water for your spaghetti noodles and cook as directed

4. Throw your spinach into the skillet with your broccoli and cook down for roughly 5 minutes again and remove from heat



5. Prep the sauce while your pasta is cooking
6. In a separate bowl, combine ricotta cheese, Parmesan cheese, garlic, olive oil and the zest from a lemon







7. Squeeze 1/2 of your lemon into the bowl of sauce and stir

8. Drain your spaghetti noodles when down and put them in the skillet with broccoli and spinach

9. Pour your ricotta cheese sauce on top of the skillet mixture and stir all together


10. Garnish with fresh lemon slices and serve!
