Easy potato pancakes

 I grew up eating these, and they are SO good, but also pretty time consuming. As a mother of two young kids, I just do not have the time to prep the potatoes for this meal unless someone else is around to entertain my babies. So, I figured out a easier way to make this classic dish. 


What you will need: 

• 1lb bag of frozen shredded potatoes 

• 1 egg

• 1 small yellow onion 

• butter

• vegetable oil 

• apple sauce

• sour cream 


1. Cook the shredded potato over medium heat just enough to thaw them out, then transfer them to a separate bowl 

2. Dice or shred your medium yellow onion into small pieces 

3. Crack an egg into the bowl with the shredded potato 

4. Add the onion to the shredded potato and mix it all together 


5. Heat butter AND vegetable oil over medium heat in your skillet (oil and butter together work best)

6. Pat the shredded potato together and add to the skillet 

7. Cook the potato pancakes until they are a nice golden brown, and then flip and do it again on the other side (about 5 minutes each side)

8. Transfer the potato pancakes to a separate plate and serve with your choice of side. My family served these with applesauce and sour cream - I suggest trying both!
