Crockpot cabbage roll soup
This recipe is perfect for those rainy days when you’re feeling lazy and just want something warm and easy to fill your belly. The prep for this recipe is roughly 30 minutes, and then it just sits all day in your crockpot while you do, well, whatever you want. This soup is hearty and filling, and pairs very well with a fresh slice of bread on the side.
What you will need:
• 1 head of cabbage
• 1 large onion
• 1lb ground beef
• 2 cans of diced tomatoes
• 1 can tomato sauce
• 4 cups vegetable or beef broth
• 1 cup instant white rice
• garlic
• 1 small spoon of tomato paste
1. Brown your ground beef in a skillet over medium heat
2. Chop your onion and add it to your ground beef so they can cook together
3. Chop your cabbage head into small pieces and transfer them to your crockpot
4. Spoon your beef and onion mixture into the crockpot over top of the cabbage
5. Pour your broth (vegetable or beef) into the crockpot
6. Empty your cans of diced tomatoes into the crockpot
7. Empty your can of tomato sauce into the crockpot
8. Add the spoon of tomato paste
9. Add a few spoons of garlic
10. Mix it all together
11. Cover the crockpot and cook on low for 6 hours
12. Add 1.5 cups of white minute rice when there are 15 minutes left
13. After the rice is cooked, it’s done and ready to serve. Enjoy!
