Spinach, mushroom & goat cheese lasagna roll ups

There are so many fun variations of lasagna roll ups to try! You can go vegetarian, meat lovers, or a little of each. I personally try to serve my family at least 3 meat-free meals a week, so I decided to create a savory cheesy spin off of lasagna. My favorite type of cheese is goat cheese, so I made sure to include that in here, too.
 Lasagna roll ups are easy to make and simple to swap out certain ingredients for something else, however, this combination was a huge hit with my family and I encourage you to try it for yourself! 

What you will need:

• 8 lasagna noodles
• Jar of pasta sauce
• 1/2 pack of mushrooms
• 1/2 yellow onion
• 1 cup crumbled goat cheese
• Italian blend shredded cheese
• 2-3 handfuls of fresh spinach
• Olive oil

1. Boil water in a large pot in preparation for your lasagna noodles
2. Dice your onion and mushrooms while the water is boiling
3. Sauté the onion and mushroom in a skillet over medium heat with some olive oil

4. Boil your lasagna noodles for about 10-12 minutes 


5. Add your handfuls of spinach to the onion and mushroom in the skillet and sauté until soft




6. Prepare your baking dish with cooking spray, and by lining the bottom with a thin layer of pasta sauce 

7. Pour the remaining sauce from the jar into the skillet with the mushrooms, onion and spinach and stir 

8. Transfer the boiled lasagna noodles one by one to your baking dish and spoon your skillet mixture on each noodle. Then, sprinkle the goat cheese on top of the mixture spread across the noodles  before slowly rolling them up 
* be sure to save a little of the skillet mixture to top finished rolled noodles with* 


9. Use the remaining skillet mixture to spread on top of rolled lasagna noodles 

10. Top rolled lasagna noodles with the Italian cheese mixture 

11. Cover the baking dish with tin foil and bake in an oven set at 350°F for 30 minutes

12. Serve with your choice of side .. I went with a side salad!
