Greek quinoa bowls

This recipe is fullll of flavor and oh so filling. This recipe is quick, easy, delicious and healthy! What more could you ask for? Okay, let’s get to it!


What you will need:
• quinoa
• 1 can chickpeas
• 1 large zucchini
• 1 red onion
• 1 red bell pepper
• cherry tomatoes
• salt and pepper
• garlic
• feta cheese
• hummus
• greek yogurt

1. Follow the instructions on your quinoa packaging and begin preparing

2. Cut your zucchini into small pieces and add to a skillet on medium heat

3. Cut your red bell pepper into small pieces and add to your skillet

4. Cut your cherry tomatoes in half and add to your skillet

5. Cut your red onion into small pieces and add to your skillet

6. Allow veggies to cook in the skillet until tender

7. Add salt, pepper, and garlic and stir


8.  Drain your can of chickpeas and add to your skillet


9. Your quinoa should be done simmering by the time you’re vegetable mixture has finished cooking

10. Spoon some quinoa into a bowl (not too much, this is very filling)

11. Spoon your vegetable mixture on top of the quinoa in your bowl (you can be generous here)

12. Add a heaping spoon of Greek yogurt to your bowl

13. Add a heaping spoon of hummus to your bowl


14. Add a heaping spoon of feta cheese to your bowl
           
                                               

15. Mix everything in your bowl together to ensure a burst of flavor in every bite you take (it may not be pretty, but it’s GOOD).
