Crustless Vegetable Quiche
I am a big fan of breakfast for dinner. Usually we do pancakes or waffles, but this is such a healthier alternative! This is SO easy, packed full vegetables, filling and flavorful. My three year old cleaned her plate, too! Give it a try!
What You Will Need:
- 1 zucchini
- 1 red bell pepper
- 1/2 carton of cherry tomatoes
- 1/2 yellow onion
- 1 crown of broccoli
- 6 eggs
- salt & pepper
1. Cut up all of your vegetables
2. Heat olive oil in a skillet on medium heat and throw your veggies in for 15 minutes to get them tender
3. Empty your vegetable mixture into a pie dish coated with non-stick spray and make sure they are spread evenly
4. Crack 6 eggs into a bowl
5. Season the eggs with salt and pepper & whisk together
6. Pour the eggs over the vegetables in your pie dish
7. Bake, uncovered, for 45 minutes at 350F
8. Let it cool for 5 minutes before serving. Top with whatever you please from hot sauce to shredded cheese!
