Spinach & Sun Dried Tomato Pasta



I'm a sucker for anything pasta, and this dinner did not disappoint. It was filling without being too heavy, and had the perfect amount of flavor. I encourage you to give it a try!!


What you will need:

  • 1/2 bag of fresh spinach 
  • 8.5 oz jar of sun dried tomatoes
  • Spaghetti noodles 
  • Olive Oil
  • Shredded parmesan cheese
  • Salt 
  • Pepper
  • Minced garlic 
  1. Empty about half your bag of spinach onto a cutting board and slice it into smaller pieces 
  2. Heat olive oil in a skillet over medium heat 
  3. Add your sliced spinach to the skillet 
  4. Drain the oil from your jar of sun dried tomatoes 
  5. Cut the tomatoes into smaller pieces 
  6. Add the tomatoes to your skillet with your spinach (stir frequently) 
  7. Boil water in a large pot 
  8. Add about a fist full of spaghetti noodles to the pot once the water is boiling 
  9. Sprinkle some salt into your cooking spaghetti, and let it boil for about 11 minutes, or until done 
  10. Add 1 tbsp of minced garlic to your tomato and spinach mixture 
  11. Stir it all together and turn heat to LOW 
  12. Once spaghetti is done boiling, drain the water and add the noodles to your skillet mixture and stir it all together 
                              
  13. Add a few dashes of black pepper to the pasta mixture 
  14. Top it all with some shredded parmesan cheese and enjoy!
