Simple Chickpea and Veggie Greek Salad

This is an insanely easy, fresh, delicious, cool Greek salad. This would be a perfect dish to make during those hot summer months. I can almost guarantee that it would be a favorite at any party/gathering, too!

What you will need:
  • 2 tbsp of olive oil
  • One 15oz can of chickpeas
  • One medium cucumber
  • One container of grape tomatoes
  • One red pepper
  • One yellow pepper
  • One lemon
  • One red onion
  • One cup pitted kalamata olives 
  • Salt and peper
  • One tsp oregano
  • One tsp minced garlic 
  • One cup feta cheese
  • Large mixing bowl
1. Peel your cucumber and cut into small pieces, then toss it into your large mixing bowl

2. Cut your grape tomatoes into small pieces, then add to your mixing bowl 
3. Cut your bell peppers into small pieces, then add to your mixing bowl 
4. Measure out 1 cup of kalamata olives (easiest if you spoon them from the jar into a measuring cup) 
5. Cut you olives, then add to your mixing bowl 
6. Cut up your red onion, then add to your mixing bowl 
7. Drain your chickpeas, then add to your mixing bowl 
9. Measure out a cup of feta cheese, then add to your mixing bowl 
10. Add your 1tsp of oregano 
11. Add 2tbsp of olive oil 
12. Add 1tsp of minced garlic 
13. Shake some salt and pepper over your mixture 
14. Cut a lemon in half and squeeze both over your mixture 
15. Stir everything together thoroughly, make sure you mix from the bottom up and everywhere in between!
16. Enjoy!
