Portobello fajitas

I love this dinner! It’s full of veggies and so yummy!  This meal is a twist on your typical fajitas, because in place of meat there are portobello mushrooms! Trust me, they are still good! This is a quick and easy dinner (my favorite kind) without sacrificing any taste. I also use a homemade fajita seasoning my friend Jolyane introduced me to, which has far less sodium than the seasoning packets. Here we go!

What you will need:
2 portobello mushroom caps
1/2 yellow onion
2 bell peppers (color of your choice)
1 16oz can of black beans
1 tbsp garlic powder
1 tbsp paprika
1 tbsp onion powder
1 tsp cumin
Salt
Pepper
Lime juice
1/4 cup water

1. Cut up all of your veggies and set aside
2. Heat olive oil in a skillet over medium heat
3. Throw your veggies in the skillet and cook until tender
4. Sprinkle a little salt and pepper on top and stir in
5. Mix your fajita seasoning in a bowl (just throw in your seasonings and mix them together)
6. Add your fajita seasoning, a couple squirts of lime juice, and 1/4 cup water to your veggies and stir together

7. Add the can of black beans and stir
8. Turn heat down a little and let your mixture simmer for 5 minutes
9. Serve by itself in a bowl, or in tortillas
10. Top with mexican blend cheese and enjoy!
