Crockpot pineapple salsa chicken

This dinner is SO easy and so good. I threw it in the crockpot this morning, and only a few  steps later it was done. The pineapple and salsa go together surprisingly perfectly. The salsa gives you some spicy while the pineapple gives you sweet. It is amazing, I promise you that!

What you will need:

  • 3 chicken breasts
  • 1 16oz jar of salsa
  • 1 18oz jar of pineapple preserves
  • 1 can of sliced pineapple 
1. Place 3 chicken breasts in your crockpot and cook on low for 6 hours, or high for 3  hours. 
2. Once the chicken is done, slowly and carefully drain excess fluid from the bottom of the crockpot. (Be careful not to dump your chicken breasts into the sink, ha!)
3. Place salsa, pineapple preserves, and half the can of sliced pineapple (5 slices) cut into smaller pieces into a separate bowl. Then mix that all together with a spoon. 


3. Pour the mixture over your chicken breasts still in the crockpot and cook on high for 30 minutes.
4. Serve with a side of your choice! I went with white rice this time, because that is what I had. I have previously served it with spanish rice and it was just as good!
